Job Summary

Prepare menu items and food products in accordance with recipes and procedures.

Duties and Responsibilities

  1. Prepares meats and seafood for line and special functions
  2. Prepares all food items related to grill and fry stations
  3. Ensures that all food products are used on a timely basis
  4. Acts as supervisor of kitchen personnel in absence of supervising chef
  5. Prepares food in accordance with established recipes
  6. Sets up, maintains, breaks down and cleans broiler, grill and fry work stations
  7. Serves items in accordance with established portion and presentation standards
  8. Notifies supervising chef in advance of expected shortages
  9. Ensures that assigned work station and equipment are clean and sanitary
  10. Maintains security and safety in work areas
  11. Maintains neat professional appearance and observes personal cleanliness rules
  12. Requisitions supplies needed to produce items on menu
  13. Adheres to state and local health and safety regulations
  14. Covers, dates and properly stores all leftover products that are re-usable
